It is Ilmirak's own aging method: pork is aged three times at low temperature with pure white rice koji, removing gaminess and deepening the flavor. The method — applying traditional Korean nuruk to raw meat aging — was granted a Korean patent in 2021 (No. 10-2404227), and our signature fermented gabrisal and fermented pork collar — the heart of our Korean BBQ menu — are made this way.
